Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 2 cups Baby spinach
  • 4 oz Cream cheese, softened
  • 1 cup Gluten-free breadcrumbs
  • 1 cup Grated Parmesan cheese
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Olive oil
  • 1 large Egg, beaten

Directions

Step 1

Preheat the oven to 375°F (190°C). Grease a baking dish with 1 tablespoon of olive oil.

Step 2

Place the chicken breasts on a cutting board. Use a sharp knife to slice horizontally into each breast, without cutting all the way through, to create a pocket.

Step 3

In a medium bowl, mix together the softened cream cheese and spinach until well combined. Spoon the mixture into each chicken breast pocket and press gently to close.

In a shallow dish, combine the gluten-free breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.

Brush the chicken breasts with the beaten egg, then coat each with the breadcrumb mixture, pressing gently to adhere.
