Ingredients

  • 4 pieces Gluten-free tortillas
  • 8 slices Bacon
  • 4 large Eggs
  • 2 tablespoons Butter
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 sliced Green onion
  • 1 medium Avocado
  • 0.5 fruit Lime
  • 1 chopped Tomato
  • 1 cup Cheddar cheese
  • 4 leaves Romaine lettuce
  • 0.5 cup Sour cream

Directions

Step 1

Start by cooking the bacon in a large skillet over medium heat until crispy, about 5 minutes per side. Once cooked, place on a paper towel to drain excess fat.

Step 2

In a bowl, whisk the eggs together with salt and pepper until well combined.

Step 3

Add butter to the same skillet used for bacon and reduce heat to medium-low. Pour the eggs into the skillet, stirring gently with a spatula to scramble them until just set, about 3-4 minutes.
