Ingredients

  • 2 slices Gluten-free bread
  • 2 slices Bacon
  • 1 Egg
  • 1 slice Cheddar cheese
  • 1 tablespoon Butter
  • 0.25 teaspoon Salt
  • 0.125 teaspoon Black pepper
  • 1 tablespoon Mayonnaise

Directions

Step 1

Begin by cooking the bacon in a non-stick skillet over medium heat until crispy, about 5-7 minutes. Flip occasionally for even cooking. Once done, transfer the bacon to a paper towel-lined plate to drain excess fat.

Step 2

While the bacon is cooking, in a small bowl, crack the egg and beat lightly with a fork. Season with salt and black pepper.

Step 3

In the same skillet used for frying bacon, remove excess bacon fat, leaving about a teaspoon in the pan to cook the egg. If there is too much fat, discard some, or add a little butter if needed.

Step 4

Pour the beaten egg into the skillet over medium-low heat, cooking slowly until the egg is just set and slightly browned, about 2-3 minutes. Fold or scramble the egg to fit the shape of the bread slice.

Step 5

Once the egg is cooked, remove it from the skillet and set aside. Toast the gluten-free bread slices in the same skillet or toaster until golden brown.

Step 6

Spread mayonnaise on one side of each toasted bread slice.

Step 7

Assemble the sandwich by layering the cooked egg, a slice of cheddar cheese, and the crispy bacon between the two slices of mayonnaise-spread gluten-free bread.

Step 8

Place the assembled sandwich back in the skillet over medium heat and cover with a lid or a piece of foil. Cook until the cheese has melted, about 2-3 minutes, flipping once halfway through for even toasting.

Step 9

Remove the sandwich from the skillet and let it cool slightly before serving.

Step 10

Cut in half if desired and enjoy your gluten-free bacon egg cheese sandwich while it's warm.
