Ingredients

  • 1 Gluten-free bagel
  • 2 slices Bacon
  • 1 Large egg
  • 1 tablespoon Milk
  • 0.125 teaspoon Salt
  • 0.125 teaspoon Black pepper
  • 1 teaspoon Butter
  • 1 slice Cheddar cheese, sliced
  • 2 slices Tomato, optional
  • 5 Spinach leaves, optional

Directions

Step 1

Begin by cooking the bacon. Place the slices in a cold skillet and turn the heat to medium. Cook until the bacon is crispy, about 5-7 minutes, flipping halfway through. Once cooked, transfer the bacon to a paper towel-lined plate to drain excess fat.

Step 2

While the bacon is cooking, whisk together the egg, milk, salt, and black pepper in a small bowl until well combined.

Step 3

In a separate small non-stick skillet, melt the butter over medium heat. Add the egg mixture and scramble gently with a spatula, stirring occasionally until the eggs are just set but still soft, about 2-3 minutes. Take care not to overcook.

Step 4

Assemble your gluten-free bagel sandwich by first slicing the bagel in half horizontally and toasting it to your desired level of doneness.

Step 5

Place a slice of cheddar cheese on one of the bagel halves, and top with the scrambled eggs. The heat from the eggs will help melt the cheese slightly.

Step 6

Layer the crispy bacon slices on top of the eggs. If using, add the tomato slices and spinach leaves for added freshness and nutrients.

Step 7

Complete the sandwich by placing the other half of the bagel on top, and serve immediately.
