Ingredients

  • 500 grams Gluten-free all-purpose flour blend
  • 7 grams Instant yeast
  • 20 grams Sugar
  • 10 grams Salt
  • 1 teaspoon Xanthan gum
  • 300 milliliters Warm water
  • 60 grams Butter, melted
  • 80 grams Baking soda
  • 2000 milliliters Water (for boiling)
  • 1 tablespoon Coarse sea salt

Directions

Step 1

In a large mixing bowl, combine the gluten-free all-purpose flour, instant yeast, sugar, salt, and xanthan gum.

Step 2

Add the warm water and melted butter to the dry ingredients and mix thoroughly until the dough forms. It should be slightly sticky.

Step 3

Turn the dough onto a lightly floured surface and knead gently for about 5 minutes until smooth. Add a little more flour if the dough is too sticky.

Step 4

Cover the dough with a clean cloth and let it rest for 10 minutes to help with shaping.

Step 5

Divide the dough into 8 equal pieces. Roll each piece into a rope about 20 inches long, and then shape it into a traditional pretzel form.

Step 6

Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper.

Step 7

Bring the 2000 ml of water to a boil in a large pot. Slowly add the baking soda to the boiling water. Be cautious as it may fizz.

Step 8

One at a time, place each pretzel into the boiling water for about 30 seconds, then remove with a slotted spoon and place on the prepared baking sheet.

Step 9

Sprinkle the pretzels with coarse sea salt.

Step 10

Bake in the preheated oven for 15-20 minutes or until the pretzels are a rich golden brown.

Step 11

Remove from oven and let them cool on a wire rack before serving warm. Enjoy your gluten-free German pretzels!
