Ingredients

  • 3 pounds Beef cheeks
  • 2 teaspoons Salt

  • 4 pieces Garlic cloves
  • 1 large White onion, chopped
  • 1 piece Lime, juiced
  • 1 teaspoon Ground cumin
  • 1 teaspoon Dried oregano
  • 3 cups Beef broth
  • 2 tablespoons Apple cider vinegar
  • 12 pieces Gluten-free corn tortillas
  • 1 bunch Cilantro, chopped
  • 4 pieces Radishes, sliced
  • 2 pieces Additional lime wedges

Directions

Step 1

Rinse the beef cheeks and pat them dry with paper towels. Sprinkle salt and black pepper on all sides.

In a large Dutch oven or slow cooker, place the beef cheeks. Add the bay leaves, garlic cloves (peeled and sliced), chopped white onion, lime juice, ground cumin, and dried oregano.
