Ingredients

  • 2 cups gluten-free all-purpose flour
  • 2 teaspoons baking powder
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 teaspoon xanthan gum
  • 4 tablespoons unsalted butter
  • 1 cup warm water
  • 2.25 teaspoons instant yeast
  • 1 egg
  • 1 tablespoon honey
  • 20 pieces mini hotdogs
  • 1 cup baking soda
  • 2 cups hot water
  • 2 tablespoons coarse sea salt

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the gluten-free flour, baking powder, sugar, salt, and xanthan gum.

Step 3

Cut the butter into small pieces and mix it into the flour mixture until it resembles crumbs.

Step 4

In a separate bowl, combine the warm water and yeast, letting it dissolve and activate for about 5 minutes.

Step 5

Add the yeast mixture, egg, and honey to the flour mixture. Stir until the dough comes together.

Step 6

Knead the dough lightly until it is smooth. If the dough is too sticky, sprinkle a little more gluten-free flour as needed.

Step 7

Divide the dough into 20 equal pieces. Roll each piece into a strip long enough to wrap around a mini hotdog.

Step 8

Wrap the dough strips around each mini hotdog tightly, pinching the ends to seal.

Step 9

In a separate pot, dissolve the baking soda in 2 cups of hot water.

Step 10

Dip each wrapped hotdog in the baking soda solution for about 30 seconds. This step gives the bites their signature crust.

Step 11

Place the dipped hotdogs on the prepared baking sheet.

Step 12

Sprinkle coarse sea salt over each hotdog bite.

Step 13

Bake in the preheated oven for 12-15 minutes, or until the dough is golden brown.

Step 14

Remove from the oven and let them cool slightly before serving. Enjoy warm!
