  • 1 tablespoon Lemon juice
  • 1 tablespoon Cornstarch
  • 1 Egg, for egg wash
  • 1 tablespoon Milk, for egg wash

Directions

Step 1

In a large bowl, combine gluten-free flour, xanthan gum, salt, and 1 tablespoon sugar. Stir until well mixed.

Cut the cold butter into small cubes and add it to the flour mixture. Use a pastry cutter or your fingers to mix until the texture resembles coarse crumbs.

Gradually add cold water, stirring with a fork until the dough comes together. If necessary, add more water, one teaspoon at a time, until the dough holds.

Shape the dough into a disc, wrap it in plastic wrap, and chill in the refrigerator for at least 30 minutes.
