Ingredients

  • 1.5 cups Gluten-free oats
  • 1 cup Almond flour
  • 0.5 cup Brown sugar
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Nutmeg
  • 0.25 teaspoon Salt
  • 0.5 cup Unsalted butter
  • 3 tablespoons Honey
  • 3 medium Apples
  • 2 tablespoons Cornstarch
  • 1 tablespoon Lemon juice
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, leaving some overhang to easily lift the squares out later.

Step 2

In a large bowl, mix together the gluten-free oats, almond flour, brown sugar, cinnamon, nutmeg, and salt.

Step 3

Melt the butter and add it to the dry ingredients along with the honey. Stir well until the mixture resembles coarse crumbs.

Step 4

Take 2/3 of this oat mixture and press it firmly and evenly into the bottom of the prepared baking pan to form the base.

Step 5

Peel, core, and chop the apples into small cubes. In a mixing bowl, combine the apples with cornstarch, lemon juice, and vanilla extract, tossing them to coat well.

Step 6

Spread the apple mixture evenly over the pressed oat base in the pan.

Step 7

Sprinkle the remaining oat mixture on top of the apple layer, pressing lightly.

Step 8

Bake in the preheated oven for 35-40 minutes, until the top is golden brown and the apples are tender.

Step 9

Allow to cool in the pan on a wire rack. Once cooled, use the parchment paper overhangs to lift the crumble out of the pan and onto a cutting board.

Step 10

Cut into squares and serve. These can be enjoyed warm or at room temperature.
