Ingredients

  • 1.5 cups Gluten-free all-purpose flour
  • 0.5 teaspoons Baking soda
  • 1 teaspoons Ground cinnamon
  • 0.25 teaspoons Salt
  • 0.5 cups Unsalted butter, softened
  • 0.5 cups Granulated sugar
  • 0.25 cups Brown sugar, packed
  • 1 Large egg
  • 1 teaspoons Vanilla extract
  • 1 cup Apple, peeled, cored, and finely chopped

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a medium bowl, whisk together the gluten-free all-purpose flour, baking soda, ground cinnamon, and salt. Set aside.

Step 3

In a large mixing bowl, cream the softened unsalted butter with the granulated sugar and brown sugar until light and fluffy, about 2-3 minutes.

Step 4

Beat in the egg and vanilla extract until well combined.

Step 5

Gradually stir the dry ingredients into the wet ingredients, mixing just until combined.

Step 6

Fold in the finely chopped apple, ensuring it's evenly distributed throughout the cookie dough.

Step 7

Using a tablespoon or cookie scoop, drop rounded spoonfuls of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.

Step 8

Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.

Step 9

Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Step 10

Store cookies in an airtight container at room temperature for up to a week.
