  • 2 tablespoons Lemon juice
  • 80 grams Brown sugar
  • 2 teaspoons Ground cinnamon
  • 60 grams Raisins
  • 2 tablespoons Cornstarch
  • 50 grams Gluten-free breadcrumbs
  • 4 tablespoons Butter, melted
  • 30 grams Icing sugar

Directions

Step 1

Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the gluten-free all-purpose flour, xanthan gum, salt, and sugar.

Step 3

Cut the unsalted butter into the flour mixture using a pastry cutter or fork until it resembles coarse crumbs.

Whisk the egg and water together, then gradually add to the flour mixture, stirring until a dough forms. Knead gently until smooth. Wrap in plastic wrap and set aside while preparing the filling.
