Ingredients

  • 200 grams Gluten-free all-purpose flour
  • 1 tablespoon Baking powder
  • 100 grams Butter, softened
  • 150 grams Granulated sugar
  • 1 teaspoon Vanilla extract
  • 2 large Eggs
  • 100 milliliters Milk
  • 200 grams Powdered sugar
  • 2 tablespoons Lemon juice

Directions

Step 1

Preheat your oven to 180°C (356°F) and line a baking sheet with parchment paper.

Step 2

In a medium bowl, whisk together the gluten-free all-purpose flour and baking powder and set aside.

Step 3

In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy using an electric hand mixer or stand mixer.

Step 4

Add the vanilla extract and eggs to the creamed mixture, one at a time, beating well after each addition.

Step 5

Gradually mix in the flour and baking powder mixture, alternating with the milk, starting and ending with the flour mixture. Mix until just combined.
