Ingredients

  • 500 grams Sweet potatoes
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Smoked paprika
  • 1 large Egg
  • 100 grams Gluten-free breadcrumbs
  • 100 grams Almond flour
  • 2 tablespoons Chopped fresh parsley
  • 50 grams Ground almonds

Directions

Step 1

Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper.

Step 2

Peel and cube the sweet potatoes. Boil them in a pot of water until tender, about 15-20 minutes.

Step 3

Drain the boiled sweet potatoes and return them to the pot. Mash them until smooth and let cool slightly.

Stir in olive oil, salt, black pepper, garlic powder, and smoked paprika into the mashed sweet potatoes.
