Ingredients

  • 150 grams Gluten-free all-purpose flour
  • 100 grams Almond flour
  • 1 teaspoon Xanthan gum
  • 50 grams Granulated sugar
  • 115 grams Unsalted butter, cold and cubed
  • 1 Egg yolk
  • 2 tablespoons Cold water
  • 120 grams Semi-sweet chocolate chips
  • 0.5 teaspoon Almond extract
  • 30 grams Sliced almonds
  • 1 whole Egg wash (1 egg + 1 tablespoon water)

Directions

Step 1

Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the gluten-free all-purpose flour, almond flour, xanthan gum, and granulated sugar.

Add the cold, cubed butter to the flour mixture and use a pastry cutter or your fingertips to cut it into the flour until the mixture resembles coarse crumbs.

In a small bowl, whisk together the egg yolk and cold water. Add the liquid to the flour and butter mixture, stirring just until the dough comes together.
