Ingredients

  • 2 cups Gluten-free all-purpose flour
  • 1 teaspoon Xanthan gum
  • 1 teaspoon Salt
  • 0.75 cup Water
  • 2 tablespoons Olive oil
  • 0.5 pound Ground beef or lamb
  • 1 medium Onion, finely chopped
  • 3 cloves Garlic, minced
  • 1 teaspoon Ground coriander
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Black pepper
  • 1 cup Tomato sauce
  • 0.5 teaspoon Red chili flakes
  • 1 cup Greek yogurt
  • 1 tablespoon Dried mint
  • 0.25 cup Chopped fresh cilantro

Directions

Step 1

In a large bowl, combine gluten-free all-purpose flour, xanthan gum, and salt. Gradually add water and 1 tablespoon of olive oil, mixing until a smooth dough forms. Wrap in plastic wrap and let it rest for 20 minutes.

Step 2

In a frying pan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add minced garlic, coriander, cumin, and black pepper. Stir for another minute.

Step 3

Add ground beef or lamb to the pan and cook until no longer pink, breaking it up into small pieces. Remove from heat and set aside to cool slightly before assembling dumplings.

Step 4

Roll out the dough on a floured surface to about 1/8 inch thick. Cut out circles, about 4 inches in diameter, using a cookie cutter or the rim of a glass.

Step 5

Place a teaspoon of the meat filling in the center of each circle. Fold and pinch the edges to seal, creating a pleated edge. Repeat this process with the remaining dough and filling.

Step 6

Arrange the dumplings in a single layer in a steamer basket. Fill a pot with enough water to reach just below the steamer basket. Cover and steam for 20 minutes.

Step 7

Meanwhile, prepare the tomato sauce by heating the tomato sauce in a small pan over medium heat. Add red chili flakes and simmer for 5 minutes.

Step 8

For the yogurt sauce, combine Greek yogurt and dried mint in a small bowl.

Step 9

Serve the steamed mantu dumplings on a platter. Drizzle with tomato sauce and yogurt sauce. Garnish with chopped fresh cilantro before serving.
