Ingredients

  • 4 cups cooked white rice
  • 2 links sausages (pork, chicken, or turkey)
  • 2 tablespoons cooking oil (vegetable or sesame)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup frozen peas
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 2 eggs, beaten
  • 2 stalks green onions, sliced
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Start by prepping all ingredients. Dice the onion and carrot, mince the garlic, slice the green onions, and beat the eggs in a small bowl. Slice the sausages into bite-sized pieces.

Step 2

Heat 1 tablespoon of cooking oil in a large skillet or wok over medium-high heat. Add the sausage slices and cook until browned and fully cooked, about 4-5 minutes. Remove the sausage from the skillet and set aside.

Step 3

In the same skillet, add another tablespoon of oil and sauté the diced onion and minced garlic for 1-2 minutes until fragrant.

Step 4

Add the diced carrots and cook for another 3 minutes, stirring occasionally, until they begin to soften.

Step 5

Push the vegetables to one side of the skillet. Pour the beaten eggs into the empty space and scramble them until fully cooked. Mix the scrambled eggs with the vegetables.

Step 6

Add the cooked white rice to the skillet, breaking up any clumps with a wooden spoon or spatula. Stir well to combine with the vegetables and eggs.

Step 7

Return the cooked sausage to the skillet and mix it into the rice.

Step 8

Drizzle the soy sauce and oyster sauce (if using) over the rice. Sprinkle with salt and black pepper. Toss everything together to ensure the rice is evenly coated.

Step 9

Add the frozen peas to the skillet and cook for an additional 2-3 minutes until the peas are heated through.

Step 10

Turn off the heat and garnish the fried rice with sliced green onions. Serve hot and enjoy!
