Start by prepping all ingredients. Dice the onion and carrot, mince the garlic, slice the green onions, and beat the eggs in a small bowl. Slice the sausages into bite-sized pieces.
Heat 1 tablespoon of cooking oil in a large skillet or wok over medium-high heat. Add the sausage slices and cook until browned and fully cooked, about 4-5 minutes. Remove the sausage from the skillet and set aside.
