Ingredients

  • 6 sheets Filo pastry sheets
  • 1 bottle Olive oil spray
  • 200 grams Raw shrimp (peeled and deveined)
  • 150 grams White fish fillet (such as cod or haddock)
  • 100 grams Low-fat Greek yogurt
  • 1 tablespoon Lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic (minced)
  • 1 tablespoon Fresh dill (chopped)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 stalks Green onions (thinly sliced)
  • 100 grams Mixed greens or fresh baby spinach

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

Lightly spray a muffin pan with olive oil spray.

Step 3

Take one filo pastry sheet, lay it on a clean surface, and lightly spray it with olive oil. Layer another filo sheet on top and spray again. Repeat until all six sheets are layered.

Step 4

Cut the layered filo sheets into 6 equal squares. Gently press each square into the muffin pan to form basket shapes. Trim any overhanging edges if necessary.

Step 5

Bake the filo baskets in the preheated oven for 8-10 minutes or until golden brown and crispy. Remove and let cool.

Step 6

While the baskets are cooling, prepare the seafood filling. Chop the shrimp and fish fillet into small, bite-sized pieces.

Step 7

Heat a nonstick skillet over medium heat and lightly spray with olive oil. Add the garlic and sauté for 30 seconds until fragrant.

Step 8

Add the shrimp and fish to the skillet, and cook for 3-4 minutes until opaque and fully cooked. Remove from heat and let cool slightly.

Step 9

In a mixing bowl, combine the cooked seafood, Greek yogurt, lemon juice, Dijon mustard, dill, salt, and black pepper. Mix until well coated.

Step 10

Divide the seafood mixture evenly into the cooled filo baskets.

Step 11

Top each basket with sliced green onions and serve over a bed of mixed greens or baby spinach for added freshness.

Step 12

Enjoy your low-fat Glen's Seafood in Filo Baskets!
