Ingredients

  • 4 pounds pork shoulder roast (bone-in or boneless)
  • 0.5 cups soy sauce
  • 0.25 cups olive oil
  • 0.25 cups balsamic vinegar
  • 2 tablespoons honey
  • 1 tablespoons Dijon mustard
  • 4 cloves garlic cloves, minced
  • 1 tablespoons fresh rosemary, chopped
  • 1 tablespoons fresh thyme, chopped
  • 1 teaspoons ground black pepper
  • 1 teaspoons salt
  • 1 cups water

Directions

Step 1

In a medium bowl, whisk together soy sauce, olive oil, balsamic vinegar, honey, Dijon mustard, minced garlic, chopped rosemary, chopped thyme, ground black pepper, and salt to create the marinade.

Step 2

Place the pork shoulder roast in a large resealable plastic bag or a shallow dish, and pour the marinade over the roast, ensuring it is evenly coated. Seal the bag or cover the dish with plastic wrap.

Step 3

Refrigerate the marinated pork roast for at least 8 hours, or preferably overnight, turning occasionally to evenly distribute the marinade.

Step 4

Preheat your oven to 325°F (165°C). Remove the pork roast from the marinade and reserve the marinade for later use.

Step 5

Place the pork roast in a roasting pan or Dutch oven, and add 1 cup of water to the pan to prevent the roast from drying out.

Step 6

Roast the pork in the preheated oven, uncovered, for approximately 3.5 to 4 hours, or until the internal temperature reaches 145°F (63°C) when measured with a meat thermometer.

Step 7

While the pork is roasting, transfer the reserved marinade to a small saucepan and bring it to a boil over medium heat. Reduce the heat to low and simmer for 5-10 minutes to thicken slightly, creating a glaze.

Step 8

During the last 30 minutes of cooking, brush the glaze over the pork roast every 10 minutes to create a caramelized, flavorful crust.

Step 9

Once the pork roast is cooked to perfection, remove it from the oven and let it rest for 10-15 minutes before slicing.

Step 10

Carve the pork roast into slices and serve warm. Pair with roasted vegetables or mashed potatoes for a complete meal!
