Ingredients

  • 1 whole Pineapple (fresh, peeled, and cored)
  • 0.5 cup Brown sugar
  • 4 tablespoons Unsalted butter
  • 0.5 cup Macadamia nuts (roughly chopped)
  • 2 tablespoons Honey
  • 0.25 cup Coconut flakes (optional, for garnish)
  • 0.5 teaspoon Cinnamon
  • 2 scoops per serving Vanilla ice cream (optional, for serving)
  • 0.125 teaspoon Salt

Directions

Step 1

Slice the peeled and cored pineapple into 1/2-inch-thick rings.

Step 2

In a skillet, melt 2 tablespoons of butter over medium heat and add the brown sugar.

Step 3

Stir until the sugar dissolves into the butter and begins to form a caramel-like glaze.

Step 4

Add the pineapple rings to the skillet in a single layer. Cook for about 3-4 minutes on each side, or until they develop a golden-brown color and are glazed with the caramel.

Step 5

Transfer the caramelized pineapple to a serving platter and keep warm.

Step 6

In the same skillet, add the remaining 2 tablespoons of butter and let it melt. Add the chopped macadamia nuts and toast them over medium-low heat for 2-3 minutes, stirring frequently to prevent burning.

Step 7

Stir in the honey, cinnamon, and a pinch of salt. Cook for 1-2 more minutes until the nuts are coated and slightly sticky.

Step 8

Spoon the macadamia nut mixture over the glazed pineapple rings.

Step 9

If desired, sprinkle with coconut flakes for extra garnish.

Step 10

Serve warm with a scoop of vanilla ice cream on top or on the side for a complete dessert experience.
