Ingredients

  • 7 pounds bone-in ham
  • 1.5 cups peach preserves
  • 1 tablespoon fresh ginger root, grated
  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 0.5 cups brown sugar
  • 20 pieces cloves (whole)
  • 0.5 cups pineapple juice

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

Place the ham on a large roasting pan with the cut side down. If the ham has a skin or thick layer of fat, trim it down to about 1/4 inch.

Step 3

Using a small sharp knife, score the surface of the ham in a diamond pattern. Insert a clove into the center of each diamond.

Step 4

In a medium saucepan, combine peach preserves, grated ginger, Dijon mustard, apple cider vinegar, brown sugar, and pineapple juice. Heat over medium heat until the mixture is smooth and heated through. Set aside about 1/2 cup of the glaze for serving.
