Ingredients

  • 6 cups Fresh strawberries
  • 1 cup Granulated sugar
  • 3 tablespoons Cornstarch
  • 1 cup Water
  • 1 tablespoon Lemon juice
  • 1 teaspoon Vanilla extract
  • 1 crust Pre-baked 9-inch pie crust
  • 1 cup Whipped cream

Directions

Step 1

Wash and hull the fresh strawberries. Pat them dry with a paper towel. Set aside 2 cups of whole strawberries to use as-is and slice the remaining 4 cups of strawberries in half or quarters for easier distribution in the pie.

Step 2

In a medium saucepan, combine sugar and cornstarch. Stir well to avoid lumps. Gradually whisk in the water and cook over medium heat until the mixture thickens and becomes translucent, about 5-7 minutes.

Remove the saucepan from the heat. Stir in the lemon juice and vanilla extract. Allow the glaze to cool for 5-10 minutes, but do not let it set completely.
