Ingredients

  • 500 grams carrots (peeled and sliced into 1/4-inch rounds)
  • 3 tablespoons unsalted butter
  • 1 tablespoon fresh ginger (grated)
  • 2 tablespoons dark brown sugar
  • 60 milliliters Irish whiskey
  • 1 tablespoon honey
  • 120 milliliters water
  • 1 teaspoon salt
  • 2 tablespoons fresh parsley (chopped, optional for garnish)

Directions

Step 1

In a medium skillet, melt the unsalted butter over medium heat.

Step 2

Once the butter is melted, add the grated fresh ginger and sauté for 1 minute until fragrant.

Step 3

Add the sliced carrots to the skillet and toss to coat them in the butter and ginger mixture.

Step 4

Stir in the dark brown sugar, Irish whiskey, honey, water, and salt. Increase the heat to medium-high and bring the mixture to a simmer.

Step 5

Reduce the heat to medium-low, cover the skillet with a lid, and let the carrots cook for 12-15 minutes, stirring occasionally, until they are fork-tender.

Step 6

Remove the lid and continue cooking for another 3-5 minutes, allowing the liquid to reduce into a thick, glossy glaze that evenly coats the carrots.

Step 7

Taste and adjust seasoning with additional salt if needed. If desired, sprinkle with freshly chopped parsley before serving.

Step 8

Serve warm as a flavorful side dish for meats, roasts, or festive meals.
