Ingredients

  • 500 grams boneless, skinless chicken thighs
  • 3 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 1 large (sliced into strips) red bell pepper
  • 1 large (julienned) carrot
  • 100 grams snow peas
  • 3 cloves (minced) garlic
  • 1 tablespoon (grated) ginger
  • 1 small (sliced thinly) red chili (optional)
  • 1 (juiced) lime
  • 2 tablespoons (chopped) fresh cilantro
  • 2 tablespoons (roughly chopped) unsalted peanuts
  • 2 cups (for serving) steamed jasmine rice

Directions

Step 1

Cut the chicken thighs into small bite-sized pieces and place them in a bowl.

Step 2

In a small bowl, mix 2 tablespoons of soy sauce, 1 tablespoon of fish sauce, 1 tablespoon of brown sugar, and the cornstarch. Pour this mixture over the chicken, toss to coat, and set aside to marinate for 10-15 minutes.

Step 3

Heat a large wok or skillet over medium-high heat and add 1 tablespoon of vegetable oil. Once hot, add the chicken and stir-fry for 4-5 minutes until cooked through. Remove the chicken from the pan and set aside.
