Ingredients

  • 1 lb Large shrimp, peeled and deveined
  • 8 oz Spaghetti or linguine
  • 4 tbsp Unsalted butter
  • 2 tbsp Olive oil
  • 4 cloves Garlic, minced
  • 0.3333 cup Dry white wine
  • 2 tbsp Fresh lemon juice
  • 0.5 tsp Red pepper flakes
  • 2 tbsp Fresh parsley, chopped
  • 0.25 cup Grated Parmesan cheese (optional)
  • None to taste Salt
  • None to taste Black pepper, freshly ground

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the spaghetti or linguine according to the package directions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set it aside.

Step 2

In a large skillet over medium heat, melt 2 tablespoons of butter with 2 tablespoons of olive oil.

Step 3

Add the minced garlic and sauté for 1-2 minutes, stirring frequently, until fragrant but not browned.

Step 4

Add the shrimp to the skillet in a single layer. Season with salt and black pepper to taste. Cook for 2-3 minutes on one side until pink, then flip and cook for 1-2 more minutes on the other side until fully cooked. Transfer the shrimp to a plate and set aside.

Step 5

Pour the dry white wine and fresh lemon juice into the skillet. Deglaze the pan by scraping up any browned bits from the bottom.

Step 6

Add the red pepper flakes and bring the mixture to a gentle simmer. Let it reduce slightly, about 2-3 minutes.

Step 7

Reduce the heat to low and whisk in the remaining 2 tablespoons of butter until the sauce is glossy.

Step 8

Return the cooked shrimp to the skillet along with the drained pasta. Toss everything together to coat the pasta evenly in the sauce. If the sauce is too thick, add reserved pasta water a tablespoon at a time until the desired consistency is reached.

Step 9

Stir in the freshly chopped parsley and adjust the seasoning with additional salt and black pepper, if needed.

Step 10

Serve immediately, garnished with grated Parmesan cheese if desired, and enjoy!
