  • 2.5 cups chicken broth
  • 1.5 cups long-grain white rice
  • 1 pound raw shrimp, peeled and deveined
  • 2 tablespoons cajun seasoning
  • 1 teaspoon paprika
  • 1 teaspoon thyme, dried
  • 1 leaf bay leaf
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 stalks scallions, chopped (for garnish)
  • 2 tablespoons parsley, chopped (for garnish)

Directions

Step 1

Heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium heat.

Step 2

Add the sliced andouille sausage to the pot and cook until browned, about 4-5 minutes. Remove the sausage and set aside.

In the same pot, add the diced chicken breast and cook until lightly browned, about 5-6 minutes. Remove the chicken and set aside with the sausage.

Add the diced onion, green bell pepper, and celery to the pot. Cook, stirring occasionally, until the vegetables are softened, about 5-6 minutes.
