Heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium heat.
Add the sliced andouille sausage to the pot and cook until browned, about 4-5 minutes. Remove the sausage and set aside.
In the same pot, add the diced chicken breast and cook until lightly browned, about 5-6 minutes. Remove the chicken and set aside with the sausage.
Add the diced onion, green bell pepper, and celery to the pot. Cook, stirring occasionally, until the vegetables are softened, about 5-6 minutes.
Stir in the minced garlic, Cajun seasoning, paprika, thyme, salt, and pepper. Cook for 1 minute to toast the spices.
Add the canned diced tomatoes with their juice, chicken broth, and bay leaf. Stir to combine.
Bring the mixture to a boil, then add the long-grain white rice. Reduce the heat to low and cover the pot with a lid.
Simmer the rice for 15 minutes, then return the cooked sausage and chicken to the pot. Stir everything together.
Place the raw shrimp on top of the mixture, cover, and cook for an additional 10 minutes until the shrimp are pink and cooked through, and the rice is tender.
Remove the pot from the heat and let it sit, covered, for 5 minutes to allow the flavors to meld.
Discard the bay leaf. Fluff the jambalaya with a fork and garnish with chopped scallions and parsley before serving.
