Ingredients

  • 1 head cauliflower
  • 2 tablespoons olive oil

  • 4 cups vegetable broth
  • 1 cup coconut milk

  • 0.5 teaspoons, or to taste black pepper
  • 1 tablespoon, freshly squeezed lemon juice
  • 2 tablespoons, chopped (optional, for garnish) fresh cilantro

Directions

Step 1

Break the cauliflower into small florets and set aside. Discard any tough stems.

In a large pot, heat the olive oil over medium heat.

Add the diced onion and sauté for 3-4 minutes until soft and translucent.
