Ingredients

  • 200 grams All-purpose flour
  • 1 teaspoon Baking soda
  • 2 teaspoons Ground ginger
  • 100 grams Caster sugar
  • 85 grams Unsalted butter
  • 3 tablespoons Golden syrup
  • 2 tablespoons Milk

Directions

Step 1

Preheat your oven to 180°C (350°F) and line two baking trays with parchment paper.

Step 2

In a mixing bowl, sift together the flour, baking soda, and ground ginger, then stir in the caster sugar.

Step 3

In a small saucepan, melt the butter and golden syrup over low heat, stirring until smooth. Remove from the heat and let it cool slightly.

Step 4

Pour the melted butter mixture into the dry ingredients and mix well. Add the milk gradually to bring the dough together into a soft but not sticky consistency.

Roll small portions of the dough into balls, roughly the size of a walnut, and place them onto the prepared trays, leaving space between each ball to allow for spreading.
