Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 3 whole garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 6 medium ripe tomatoes, chopped
  • 2 tablespoons tomato paste
  • 4 cups vegetable broth
  • 1 teaspoon sugar
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons heavy cream (optional for garnish)
  • 2 tablespoons fresh cilantro, chopped (optional for garnish)
  • 1 serving crusty bread or croutons (optional for serving)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped onion and sauté for 3-4 minutes until translucent.

Step 3

Stir in the minced garlic and grated ginger, and cook for another 1-2 minutes until fragrant.

Step 4

Add the chopped ripe tomatoes and cook for 5 minutes, stirring occasionally, until they start to break down.

Step 5

Add the tomato paste, vegetable broth, sugar, ground cumin, paprika, salt, and black pepper. Stir to combine.

Step 6

Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for 20 minutes.

Step 7

Use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the soup to a countertop blender and blend in batches, then return it to the pot.

Step 8

Taste the soup and adjust seasoning as needed. If it’s too tangy, add a pinch more sugar.

Step 9

Serve hot, garnished with a drizzle of heavy cream and a sprinkle of fresh cilantro if desired. Pair with crusty bread or croutons for extra texture.
