Ingredients

  • 4 Green onions, sliced (white and green parts separated)
  • 6 cups Chicken or vegetable broth
  • 3 tablespoons Soy sauce
  • 1 tablespoon Rice vinegar
  • 1 teaspoon Sesame oil
  • 8 ounces Chinese egg noodles or thin spaghetti
  • 4 Baby bok choy, halved lengthwise
  • 2 Carrots, julienned
  • 1 cup Cooked shredded chicken (optional)
  • 0.25 cup Cilantro leaves, chopped
  • 0.5 teaspoon Red chili flakes (optional)

Directions

Step 1

Heat the vegetable oil in a large pot over medium heat.

Step 2

Add the sliced ginger and minced garlic to the pot. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.

Stir in the white parts of the sliced green onions. Sauté for another 1 minute.
