Ingredients

  • 2.5 cups All-purpose flour
  • 2 teaspoons Ground ginger

  • 1.5 teaspoons Baking soda
  • 0.5 teaspoons Salt
  • 0.75 cups Unsalted butter, softened
  • 1 cup Brown sugar
  • 1 cup Molasses
  • 2 pieces Large eggs
  • 1 cup Buttermilk
  • 0.5 cups Raisins
  • 0.25 cups Dark rum
  • 0.5 cups Granulated sugar
  • 0.25 cups Water
  • 0.5 cups Heavy cream
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan and set it aside.

Step 2

In a medium bowl, whisk together the flour, ground ginger, cinnamon, cloves, baking soda, and salt. Set this dry mixture aside.

Step 3

In a large mixing bowl, beat the softened butter and brown sugar using a hand or stand mixer until the mixture is light and fluffy, about 2 minutes.

Add the molasses to the butter and sugar mixture and mix until smooth. Then, add the eggs one at a time, beating well after each addition.

Gradually add the dry ingredients into the wet ingredients, alternating with the buttermilk. Start and end with the dry ingredients, mixing just until combined.

Add the heavy cream to the saucepan and continue to simmer for another 3–4 minutes, or until the sauce slightly thickens. Remove from heat and stir in the vanilla extract.

Let the cake cool slightly, then slice into squares. Serve warm or at room temperature, topped with the Rum Raisin Sauce.
