Ingredients

  • 2.5 cups All-purpose flour
  • 1.25 teaspoons Baking soda
  • 1.5 teaspoons Ground ginger
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground cloves
  • 0.25 teaspoon Ground nutmeg
  • 0.5 teaspoon Salt
  • 0.75 cup Unsalted butter, melted and slightly cooled
  • 0.75 cup Molasses
  • 0.5 cup Granulated sugar
  • 0.5 cup Brown sugar, packed
  • 2 large Eggs
  • 1 cup Whole milk, at room temperature
  • 0.5 cup Boiling water

Directions

Step 1

Preheat the oven to 350°F (175°C). Grease and flour a 9x9-inch baking dish, or line it with parchment paper for easier removal.

Step 2

In a medium bowl, whisk together the flour, baking soda, ground ginger, cinnamon, cloves, nutmeg, and salt. Set aside.

Step 3

In a large mixing bowl, whisk together the melted butter, molasses, granulated sugar, and brown sugar until thoroughly combined.

Step 4

Add the eggs, one at a time, to the wet mixture, whisking well after each addition.

Step 5

Gradually mix in the room temperature whole milk until the mixture is smooth.

Step 6

Add the dry ingredients to the wet ingredients in three batches, gently folding with a spatula or whisk to combine. Do not overmix; a few lumps are okay.

Step 7

Carefully stir in the boiling water into the batter. The batter will be thin, but this is normal.

Step 8

Pour the batter into the prepared baking dish, spreading it out evenly with a spatula.

Step 9

Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Step 10

Allow the cake to cool in the pan for 15 minutes before transferring it to a wire rack to cool completely.

Step 11

Serve plain, dusted with powdered sugar, or with a dollop of whipped cream. Enjoy!
