Ingredients

  • 500 grams Shrimp, peeled and deveined
  • 1 tablespoon Fresh ginger, grated
  • 2 cloves Garlic, minced
  • 2 tablespoons Soy sauce
  • 1 tablespoon Honey
  • 3 tablespoons Olive oil
  • 2 large Carrots, peeled and grated
  • 1 cup Couscous
  • 1.25 cups Water or chicken stock (for couscous)
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 2 tablespoons Parsley, chopped (for garnish)
  • 4 pieces Lemon wedges (for serving)

Directions

Step 1

In a small bowl, combine the grated ginger, minced garlic, soy sauce, and honey to prepare the marinade.

Step 2

Place the shrimp in a medium bowl and pour the marinade over them. Toss to coat and let sit for 10 minutes.

In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the grated carrots and sauté for 2-3 minutes until slightly softened.
