Ingredients

  • 1 lb Boneless, skinless chicken thighs
  • 3 tbsp Soy sauce
  • 2 tbsp Sesame oil
  • 1 tbsp Honey
  • 1 tbsp Fresh ginger
  • 2 Garlic cloves
  • 1 tsp Cornstarch
  • 2 tbsp Water
  • 1 tbsp Vegetable oil
  • 1 medium White onion
  • 2 heads Bok choy
  • 8 oz Cremini mushrooms
  • 1 tbsp Sesame seeds
  • 2 Green onions
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Cut the chicken thighs into bite-sized pieces and place them in a mixing bowl.

Step 2

In a small bowl, combine soy sauce, sesame oil, honey, grated ginger, minced garlic, and cornstarch mixed with 2 tablespoons of water. Stir to create a marinade.

Step 3

Pour half of the marinade over the chicken and let it sit for 10 minutes while preparing the vegetables.

Slice the onion into thin wedges, chop the bok choy into large chunks, and clean and slice the mushrooms. Thinly slice the green onions for garnish.
