  • 0.5 cups Unsalted butter (cold, cubed)
  • 0.25 cups Crystallized ginger (finely chopped)
  • 0.75 cups Heavy cream
  • 1 teaspoon Vanilla extract
  • 1 large Egg (for egg wash)
  • 1 tablespoon Heavy cream (for egg wash)
  • 2 teaspoons Coarse sugar (optional, for topping)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a large mixing bowl, whisk together the all-purpose flour, baking powder, ground ginger, salt, and granulated sugar.

Add the cold, cubed butter to the dry ingredients and use a pastry cutter or your fingers to work it in until the mixture resembles coarse crumbs.
