Ingredients

  • 2 tablespoons fresh ginger, peeled and grated
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 2 tablespoons sesame oil
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 tablespoon lime juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Begin by peeling and grating fresh ginger using a microplane or the fine side of a box grater to yield 2 tablespoons. Place the grated ginger into a mixing bowl.

Step 2

Add 3 tablespoons of soy sauce, 1 tablespoon of rice vinegar, and 1 tablespoon of honey to the bowl with the ginger. Stir to combine and dissolve the honey completely.

Step 3

Next, add 2 tablespoons of sesame oil and 1 tablespoon of olive oil to the mixture. Whisk vigorously until well combined and emulsified.

Step 4

Mince 1 clove of garlic and add it to the dressing mixture along with 1 tablespoon of freshly squeezed lime juice.

Step 5

Season the dressing with 0.5 teaspoon of salt and 0.25 teaspoon of black pepper. Adjust to taste if necessary.

Step 6

For a smoother consistency, transfer the mixture to a blender or food processor and blend for about 30 seconds.

Step 7

Pour the ginger dressing into a jar or bottle with a tight-fitting lid and shake well before serving.

Step 8

Store any leftover dressing in the refrigerator for up to one week. Shake or whisk before using as the ingredients may separate over time.
