Ingredients

  • 1 lb Ground pork
  • 2 tbsp Fresh ginger, minced
  • 3 cloves Garlic, minced
  • 3 tbsp Soy sauce
  • 2 tbsp Hoisin sauce
  • 1 tbsp Sesame oil
  • 1 tbsp Honey
  • 1 tbsp Rice vinegar
  • 1 can (8 oz) Water chestnuts, diced
  • 3 stalks Green onions, sliced
  • 1 cup Shredded carrots
  • 12 leaves Butter lettuce leaves (or Romaine lettuce)
  • 1 tbsp Cooking oil (vegetable or canola)
  • 0.25 tsp Red pepper flakes (optional)

Directions

Step 1

In a small bowl, whisk together soy sauce, hoisin sauce, sesame oil, honey, and rice vinegar. Set the sauce mixture aside.

Step 2

Heat a large skillet over medium-high heat, and add the cooking oil. Once hot, add the ground pork, breaking it up with a wooden spoon, and cook for 5-7 minutes until browned and fully cooked.

Step 3

Stir in the minced ginger and garlic, and cook for 1-2 minutes, until aromatic.

Step 4

Reduce the heat to medium and pour the prepared sauce mixture into the skillet. Stir well to coat the pork evenly.

Step 5

Add the diced water chestnuts, shredded carrots, and red pepper flakes (if using). Cook for another 2-3 minutes until the vegetables are tender-crisp.

Step 6

Remove the skillet from heat and stir in the sliced green onions.

Step 7

To serve, spoon the ginger pork mixture into individual lettuce leaves and fold them like a taco or roll them up. Enjoy immediately.
