Ingredients

  • 6 pieces Chicken thighs (bone-in or boneless, skin-on preferred)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Vegetable oil
  • 1 tablespoon Fresh ginger (grated)
  • 3 cloves Garlic (minced)
  • 0.25 cup Soy sauce
  • 2 tablespoons Brown sugar
  • 2 tablespoons Honey
  • 2 tablespoons Fresh lime juice
  • 1 teaspoon Lime zest
  • 0.25 cup Water
  • 1 teaspoon Cornstarch
  • 2 stalks Green onions (sliced, for garnish)
  • 1 teaspoon Sesame seeds (optional, for garnish)

Directions

Step 1

Season the chicken thighs on both sides with salt and black pepper.

Step 2

Heat a large skillet or non-stick pan over medium-high heat and add the vegetable oil.

Step 3

Place the chicken thighs skin-side down in the hot pan. Sear for 4-5 minutes until the skin is golden brown and crispy. Flip the chicken and cook for an additional 3-4 minutes on the other side.

Step 4

Remove the chicken from the pan and set it aside on a plate. Drain any excess fat from the pan, leaving about 1 tablespoon of oil behind.

Step 5

Lower the heat to medium. Add the grated ginger and minced garlic to the pan and sauté for 1 minute until fragrant.

Step 6

In a small bowl, whisk together the soy sauce, brown sugar, honey, lime juice, lime zest, and water.

Step 7

Add the sauce mixture to the pan, stirring to combine with the ginger and garlic. Bring the sauce to a simmer.

Step 8

In another small bowl, mix the cornstarch with 1 tablespoon of water to form a slurry. Slowly whisk the slurry into the sauce to thicken it.

Step 9

Return the chicken thighs to the pan, spooning the glaze over the chicken to coat. Cover the pan and let the chicken cook for 10-12 minutes, or until the internal temperature reaches 165°F (74°C).

Step 10

Remove the lid and allow the glaze to reduce slightly for another 2-3 minutes, spooning it over the chicken frequently.

Step 11

Transfer the glazed chicken to a serving plate and garnish with sliced green onions and sesame seeds if desired.

Step 12

Serve hot with steamed rice and vegetables or your favorite sides. Enjoy!
