Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 2 tablespoons fresh ginger, grated
  • 2 medium carrots, diced
  • 2 stalks celery stalks, diced
  • 1 cup dried red lentils, rinsed and drained
  • 6 cups vegetable broth
  • 1 14-ounce can canned diced tomatoes
  • 1 teaspoon ground cumin
  • 0.5 teaspoon ground turmeric
  • 0.5 teaspoon ground coriander
  • 1 teaspoon kosher salt
  • 0.5 teaspoon freshly ground black pepper
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh cilantro, chopped, for garnish

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and sauté for 5 minutes until translucent.

Step 3

Stir in the garlic and grated ginger, cooking for 1 minute until fragrant.

Step 4

Add the diced carrots and celery to the pot and cook for another 5 minutes until slightly softened.

Step 5

Stir in the red lentils, vegetable broth, diced tomatoes, cumin, turmeric, coriander, salt, and pepper.

Step 6

Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 25–30 minutes, or until the lentils are tender.

Step 7

Use an immersion blender to partially blend the soup for a creamier texture, or leave it as-is for a chunkier consistency.

Step 8

Stir in the fresh lemon juice and adjust the seasoning if needed.

Step 9

Serve hot, garnished with fresh cilantro.
