  • 395 g Sweetened condensed milk
  • 150 g Unsalted butter
  • 250 g Ginger cookies
  • 100 g Desiccated coconut
  • 60 ml Fresh lemon juice
  • 1 lemon Grated lemon zest
  • 150 g Powdered sugar
  • 100 g Softened cream cheese
  • 2 tsp Fresh ginger (grated)

Directions

Step 1

Line a 20x20 cm (8x8 inch) square baking tin with parchment paper, ensuring the edges hang over for easy removal.

Step 2

In a small saucepan over low heat, combine the sweetened condensed milk and butter. Stir until the butter has melted and the mixture is smooth. Remove from heat and allow to cool slightly.

Place the ginger cookies in a food processor and blitz until finely crushed. Alternatively, place the cookies in a zip-lock bag and crush with a rolling pin.
