Ingredients

  • 3 cups Unsweetened shredded coconut
  • 1 14-ounce can Sweetened condensed milk
  • 0.333 cup Crystallized ginger, finely chopped
  • 1 teaspoon Ground ginger
  • 1 teaspoon Pure vanilla extract
  • 2 Egg whites
  • 0.25 teaspoon Salt
  • 4 ounces Dark chocolate, melted (optional for drizzling)

Directions

Step 1

Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the shredded coconut, sweetened condensed milk, finely chopped crystallized ginger, ground ginger, and vanilla extract. Mix well until all ingredients are fully incorporated.

Step 3

In a separate bowl, beat the egg whites with the salt using a hand mixer or stand mixer until medium-stiff peaks form.

Step 4

Gently fold the whipped egg whites into the coconut mixture, ensuring it is evenly combined without deflating the eggs too much.

Step 5

Using a small ice cream scoop or tablespoon, scoop out mounds of the mixture onto the prepared baking sheet, spacing them about 1 inch apart.

Step 6

Bake in the preheated oven for 20 to 25 minutes, or until the macaroons are golden brown on the edges and set in the middle.

Step 7

Allow the macaroons to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Step 8

If desired, drizzle or dip the cooled macaroons with melted dark chocolate and allow the chocolate to set before serving.

Step 9

Store the macaroons in an airtight container at room temperature for up to 5 days, or refrigerate for longer storage.
