Ingredients

  • 1 cup jasmine rice
  • 2 cups water
  • 1 tablespoon fresh ginger
  • 1 teaspoon orange zest
  • 1 teaspoon lime zest
  • 2 tablespoons orange juice
  • 1 tablespoon lime juice
  • 2 teaspoons olive oil
  • 0.5 teaspoon salt
  • 2 stalks green onions
  • 2 tablespoons fresh cilantro

Directions

Step 1

Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.

Step 2

In a medium saucepan, combine the rinsed rice, water, and 1/2 teaspoon of salt. Bring to a boil over medium-high heat.

Step 3

Once the water reaches a boil, lower the heat to low, cover the saucepan, and let it simmer for 15-18 minutes or until the rice is cooked and the water is absorbed.

While the rice cooks, peel and finely grate the fresh ginger, and zest the orange and lime. Chop the green onions and cilantro finely and set them aside.

Once the rice is cooked, remove the saucepan from the heat and let it sit, covered, for 5 minutes to allow the rice to steam.

In a small bowl, whisk together the orange juice, lime juice, olive oil, grated ginger, orange zest, and lime zest to create the citrus-ginger dressing.

Fluff the rice with a fork and gently fold in the citrus-ginger dressing until the rice is evenly coated.
