Ingredients

  • 400 grams Beef tenderloin (or sirloin)

  • 2 tablespoons Lemon juice, freshly squeezed
  • 2 tablespoons Olive oil
  • 1 clove Garlic, minced
  • 0.5 teaspoons Ground black pepper
  • 1 teaspoon Sesame oil
  • 2 stalks Green onions, finely sliced
  • 1 tablespoon Sesame seeds, toasted
  • 1 bowl Ice water

Directions

Step 1

Pat the beef tenderloin dry with paper towels. Season lightly with ground black pepper on all sides.

Step 2

Heat 1 tablespoon of olive oil in a heavy skillet over high heat until it is almost smoking. Carefully sear the beef for about 30 seconds on each side, ensuring a golden, crusty exterior while keeping the inside rare. Remove the beef from the heat and transfer it immediately into a bowl of ice water to stop the cooking process. Let it cool for 3-5 minutes.

Dry the beef thoroughly with paper towels after removing it from the ice water. Wrap it tightly in plastic wrap and refrigerate for at least 10 minutes (or up to 1 hour) to firm it up for easier slicing.
