Ingredients

  • 1 pound Beef sirloin, thinly sliced
  • 3 tablespoons Soy sauce
  • 2 teaspoons Cornstarch
  • 1 bunch Asparagus, trimmed and cut into 2-inch pieces
  • 8 ounces Cremini or button mushrooms, sliced
  • 1 tablespoon Fresh ginger, minced
  • 3 cloves Garlic, minced
  • 3 Green onions, sliced
  • 3 tablespoons Vegetable oil
  • 2 tablespoons Oyster sauce
  • 1 tablespoon Honey
  • 1 teaspoon Sesame oil
  • 2 tablespoons Water
  • 4 servings Cooked white rice or noodles (for serving, optional)

Directions

Step 1

In a bowl, combine the beef, 1 tablespoon of soy sauce, and cornstarch. Mix well and let marinate for 10 minutes while preparing the vegetables and sauce.

Step 2

In a small bowl, whisk together the remaining soy sauce, oyster sauce, honey, sesame oil, and water. Set the sauce aside.

Step 3

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced beef in a single layer and sear for 1-2 minutes on each side until browned but not fully cooked through. Remove the beef from the pan and set aside.

Step 4

Add another tablespoon of vegetable oil to the skillet. Add the asparagus and cook for 2 minutes until it turns bright green and begins to soften. Then, add the mushrooms and continue cooking for another 2-3 minutes, or until the mushrooms release their moisture and start to brown.

Step 5

Push the vegetables to one side of the skillet and add the remaining tablespoon of vegetable oil to the empty space. Add the ginger and garlic, stirring constantly for 30 seconds until fragrant.

Step 6

Return the beef to the skillet and pour the prepared sauce over everything. Toss all the ingredients together to coat evenly in the sauce. Cook for 2-3 minutes, or until the beef is cooked through and the sauce has slightly thickened.

Step 7

Sprinkle the sliced green onions over the finished dish and serve immediately with cooked rice or noodles, if desired.
