Ingredients

  • 1.5 pounds beef stew meat
  • 2 tablespoons olive oil
  • 1 large yellow onion
  • 3 medium carrots
  • 2 celery stalks
  • 4 medium Yukon Gold potatoes
  • 3 garlic cloves
  • 1 tablespoon fresh ginger
  • 2 tablespoons tomato paste
  • 8 cups beef broth
  • 1 14.5-ounce can diced tomatoes
  • 1 cup green beans
  • 1 cup corn kernels
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Season the beef stew meat with salt and black pepper. Sear the beef in batches until browned on all sides. Remove and set aside.

Step 3

Dice the onion, carrots, and celery. Mince the garlic and grate the fresh ginger.

Step 4

In the same pot, lower the heat to medium and sauté the onion until translucent, about 4-5 minutes.

Step 5

Stir in the garlic, ginger, and tomato paste. Cook for 1-2 minutes until aromatic.

Step 6

Add the beef broth and diced tomatoes, scraping the bottom of the pot to release any browned bits.

Step 7

Peel and dice the potatoes into 1-inch chunks, then add them to the pot along with the browned beef, bay leaf, thyme, salt, and black pepper.

Step 8

Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 60 minutes, stirring occasionally.

Step 9

Trim and cut the green beans into 1-inch pieces. Add them along with the corn during the last 15 minutes of cooking.

Step 10

Taste and adjust seasoning if needed. Remove the bay leaf before serving.

Step 11

Garnish with freshly chopped parsley and serve hot with crusty bread or crackers.
