Ingredients

  • 1 pre-made or homemade crust pie crust
  • 4 whole large ripe tomatoes
  • 1 teaspoon kosher salt
  • 8 leaves fresh basil leaves
  • 2 stalks green onions
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 0.5 cup mayonnaise
  • 0.5 teaspoon ground black pepper
  • 0.25 teaspoon garlic powder
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Place your pie crust in a 9-inch pie dish. Use a fork to dock (poke small holes into) the bottom of the crust to prevent bubbling. Par-bake the crust for 10 minutes, then set it aside to cool.

Step 3

Slice the tomatoes into 1/4-inch thick rounds. Lay the slices on a paper towel-lined baking sheet and sprinkle them with kosher salt to draw out excess moisture. Let sit for about 10 minutes, then pat them dry with another paper towel.

Step 4

Stack basil leaves, roll them tightly, and slice them thinly (a technique called chiffonade). Finely chop the green onions.

Step 5

In a mixing bowl, combine shredded cheddar cheese, shredded mozzarella, mayonnaise, ground black pepper, and garlic powder. Mix until evenly combined.

Step 6

Layer the tomato slices in the cooled pie crust, slightly overlapping them in concentric circles. Sprinkle the chopped green onions and half of the cut basil over the tomatoes.

Step 7

Spread the cheese mixture evenly over the tomato layer, using a spatula to smooth it out.

Step 8

Bake the pie in the preheated oven for 30 minutes, or until the top is golden and bubbly.

Step 9

Remove the pie from the oven and let it cool for 10 minutes. Drizzle with olive oil and garnish with the remaining basil before serving.

Step 10

Slice and serve warm or at room temperature. Enjoy!
