Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 2 medium carrot, diced
  • 3 cloves garlic, minced
  • 1 pound ground beef or lamb
  • 1 cup frozen peas
  • 2 tablespoons tomato paste
  • 1 cup beef or chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 large russet potatoes
  • 4 tablespoons unsalted butter
  • 0.5 cup milk (whole or 2%)
  • 0.5 cup shredded cheddar cheese (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Peel the russet potatoes and cut them into chunks. Bring a large pot of salted water to a boil. Add the potatoes and cook until fork-tender, about 15 minutes.

Step 3

While the potatoes are cooking, heat olive oil in a large skillet over medium heat. Add the diced onion and carrots, and cook for 5 minutes, stirring occasionally, until softened.

Step 4

Add the minced garlic to the skillet and cook for another minute until fragrant.

Step 5

Add the ground beef or lamb to the skillet and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat, if necessary.

Step 6

Stir in the tomato paste, beef or chicken broth, Worcestershire sauce, salt, and black pepper. Mix well and let it simmer for 5 minutes until the mixture thickens slightly.

Step 7

Stir in the frozen peas and cook for an additional 2 minutes. Turn off the heat and spread the meat mixture evenly in a 9x13-inch baking dish.

Step 8

Drain the cooked potatoes and return them to the pot. Add the butter and milk, and mash them until smooth. Season with additional salt, if needed.

Step 9

Spread the mashed potatoes evenly over the meat mixture in the baking dish. If desired, sprinkle shredded cheddar cheese on top for an extra layer of flavor.

Step 10

Place the baking dish in the preheated oven and bake for 20 minutes, or until the top is golden and bubbly.

Step 11

Allow the Shepherd's Pie to cool for 5 minutes before serving. Enjoy this hearty, delicious dish with your family or friends!
