Ingredients

  • 12 ounces Penne pasta
  • 2 cups Cherry tomatoes
  • 1 large Cucumber
  • 1 medium Red bell pepper
  • 0.5 medium Red onion
  • 0.5 cup Black olives (sliced)
  • 0.75 cup Feta cheese (crumbled)
  • 0.25 cup Fresh parsley (chopped)
  • 0.25 cup Extra-virgin olive oil
  • 3 tablespoons Red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic (minced)
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Cook the penne pasta according to the package instructions. Once cooked, drain and rinse under cold water to cool, then set aside.

While the pasta is cooking, chop the vegetables. Halve the cherry tomatoes, dice the cucumber and red bell pepper, and thinly slice the red onion.
