Ingredients

  • 6 large Russet potatoes
  • 1 medium Yellow onion
  • 3 large Garlic cloves
  • 4 cups Chicken broth
  • 1 cup Heavy cream
  • 8 oz Cream cheese
  • 4 tbsp Butter
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 cup Shredded sharp cheddar cheese
  • 6 slices Cooked bacon
  • 2 tbsp Chopped fresh chives

Directions

Step 1

Peel and dice the russet potatoes into small, equal-sized cubes and place them in the crock pot.

Step 2

Dice the yellow onion and mince the garlic cloves. Add both to the crock pot.

Step 3

Pour the chicken broth over the potatoes, onions, and garlic. Add the salt and black pepper, stirring to combine.

Cover and cook on low for 6 hours, or until the potatoes are fork-tender.

Once the potatoes are cooked, use a potato masher or immersion blender to partially mash the soup. Leave some chunks of potato for texture.
