Ingredients

  • 3 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 6 large (thinly sliced) Yellow onions
  • 2 minced Garlic cloves
  • 1 teaspoon Granulated sugar
  • 1 cup Dry white wine
  • 8 cups Beef broth
  • 1 piece Bay leaf
  • 2 sprigs Fresh thyme
  • 1 small loaf (sliced into 1-inch rounds) Baguette
  • 2 cups (grated) Gruyère cheese
  • 0 to taste Salt
  • 0 to taste Black pepper

Directions

Step 1

In a large, heavy-bottomed pot, heat the butter and olive oil over medium heat until the butter melts.

Step 2

Add the sliced onions to the pot and toss to coat them evenly with the butter and oil mixture.

Step 3

Cook the onions, stirring frequently, for about 25-30 minutes until they are deeply golden and caramelized. Sprinkle them with sugar about halfway through this process to enhance caramelization.

Step 4

Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

Step 5

Deglaze the pot by pouring in the white wine and scraping the bottom of the pot to release any browned bits. Let it cook for 2-3 minutes until the wine has mostly evaporated.

Step 6

Add the beef broth, bay leaf, and thyme to the pot. Bring the mixture to a simmer over medium heat.

Step 7

Reduce the heat to low and let the soup simmer gently for about 20 minutes to allow the flavors to meld together. Season with salt and black pepper to taste.

Step 8

While the soup is simmering, preheat the oven to 375°F (190°C). Arrange the baguette slices on a baking sheet and toast them for 8-10 minutes until they are crisp and golden.

Step 9

Ladle the soup into oven-safe bowls or crocks, leaving some room at the top for the bread and cheese.

Step 10

Place one or two toasted baguette slices on top of each serving of soup, then sprinkle a generous amount of grated Gruyère cheese over the bread.

Step 11

Place the bowls on a baking sheet and carefully transfer them to the oven. Broil on high for 2-3 minutes, or until the cheese is melted, bubbly, and slightly golden.

Step 12

Serve the soup hot with additional baguette slices on the side if desired.
