Ingredients

  • 12 ounces fresh cranberries
  • 3 tablespoons granulated sugar
  • 1 large red apple
  • 1 large green apple
  • 1 cup seedless red grapes
  • 8 ounces crushed pineapple
  • 1 cup miniature marshmallows
  • 0.5 cup chopped walnuts
  • 1 cup whipping cream
  • 1 tablespoon powdered sugar
  • 0.5 teaspoon vanilla extract

Directions

Step 1

Rinse the cranberries under cold water, then pulse them in a food processor until finely chopped. Place the chopped cranberries in a large mixing bowl.

Step 2

Sprinkle the granulated sugar over the cranberries, stir well, and allow the mixture to sit for 15 minutes to sweeten.

Step 3

While the cranberries are resting, dice the red and green apples into small bite-sized pieces. Leave the skins on for added texture and color.

Step 4

Slice the red grapes in half and drain the crushed pineapple of excess juice.

Step 5

Add the diced apples, grapes, crushed pineapple, miniature marshmallows, and chopped walnuts to the cranberry mixture. Stir gently to combine.

Step 6

In a medium mixing bowl, whip the whipping cream using an electric mixer until soft peaks begin to form. Add the powdered sugar and vanilla extract, then continue whipping until the cream forms firm peaks.

Step 7

Gently fold the whipped cream into the cranberry and fruit mixture until thoroughly combined.

Step 8

Cover the salad and refrigerate for at least 2 hours to allow flavors to meld together before serving.

Step 9

Serve chilled as a side dish or light dessert. Enjoy!
